三餸一湯|蒜香絲瓜蒸加州鱸魚 Steamed Black Bass Fillet with Garlic and Angled Luffa

蒜香絲瓜蒸加州鱸魚

材料:

加州鱸魚柳2片

絲瓜1/2條

煙肉1片

蒜頭2瓣

葱1棵

鹽1茶匙

胡椒粉1茶匙

薑 20克

麻油1茶匙

油 少許

甜豉油 1茶匙

米糠油 5湯匙

步驟:

1. 薑磨茸;蒜頭剁茸;葱及煙肉切粒。

2. 加州鱸魚柳洗淨,印乾水分,切片,將鹽、胡椒粉、薑茸加入至鱸魚柳,醃10分鐘

3. 絲瓜刨皮、切片。

4. 將加州鱸魚柳、絲瓜放在碟上。

5. 燒熱米糠油、麻油,炸蒜茸2分鐘,將蒜茸加在鱸魚柳上。

6. 以大火蒸加州鱸魚柳6分鐘。

7. 燒熱米糠油,炸煙肉2分鐘,將葱花、煙肉撒在鱸魚柳上。

Steamed Black Bass Fillet with Garlic and Angled Luffa

Ingredients:

Black bass fillet 2 slices

Angled luffa 1/2 pc

Bacon 1 slice

Garlic 2 slices

Spring onion 1 pc

Salt 1 teaspoon

Pepper 1 teaspoon

Ginger 20g

Sesame oil 1 teaspoon

Oil little

Sweet soy sauce 1 teaspoon

Rice bran oil 5 tablespoons

Steps:

1. Grate ginger. Mince garlic. Dice spring onion and bacon.

2. Wash black bass fillet and wipe with kitchen paper and slice, put salt, pepper, grated ginger into black bass fillet, marinate for 10 mins.

3. Peel angled luffa and slice.

4. Put black bass fillet and angled luffa on the plate.

5. Heat the rice bran oil and sesame oil, deep fry minced garlic 2 mins, put minced garlic on black bass fillet.

6. Steam black bass fillet for 6 mins with high heat.

7. Heat the rice bran oil and deep fry bacon 2 mins, finally put diced spring onion and bacon on black bass fillet.
